We
are most pleased to introduce the Eagle's French Chef, Jean-Pierre
Merlat. Born in Brittany, France, and apprenticed in Paris, Mssr.
Merlat brings with him over 30 years' experience in some of the
world's top kitchens. Most recently having worked in St. Tropez
Restaurant, on the island of St. Croix, Jean-Pierre has also served
as chef in restaurants in New York, (notably, L'Entrecote and Voulez-Vous)
as well as Le Pavillion in Florida and the Hotel Intercontinental
in Chicago. Infusing his wealth of culinary knowledge, coupled with
a deep understanding of French bistro, Jean-Pierre will assure the
Eagles offerings are something truly remarkable.

guests. As the rehabilitation of the Eagle Hotel progresses, ( please
