We are most pleased to introduce the Eagle's French Chef, Jean-Pierre Merlat. Born in Brittany, France, and apprenticed in Paris, Mssr. Merlat brings with him over 30 years' experience in some of the world's top kitchens. Most recently having worked in St. Tropez Restaurant, on the island of St. Croix, Jean-Pierre has also served as chef in restaurants in New York, (notably, L'Entrecote and Voulez-Vous) as well as Le Pavillion in Florida and the Hotel Intercontinental in Chicago. Infusing his wealth of culinary knowledge, coupled with a deep understanding of French bistro, Jean-Pierre will assure the Eagle’s offerings are something truly remarkable.

Above is just a brief sampling of what the Eagle will have to offer its guests. As the rehabilitation of the Eagle Hotel progresses, ( please see our homepage to watch progress) we are coming ever-nearer to opening day! Please check back often, or send us your thoughts. Thank you for taking the time to get to know us, and we look forward to serving you in the future…
